Sheet Pan Smoked Sausage Dinner is a super tasty way to enjoy asparagus. Asparagus is in season from February to June with April being the peak month.
The smoked sausage is already fully cooked so you add it at the end just to heat through. I use turkey smoked sausage in this recipe and buy the brand with the lowest sodium.
This dish can be served over pasta or with a slice of hearty rustic bread.

Sheet Pan Smoked Sausage and Vegetables
Ingredients:
- 2 tablespoons olive oil
- 1 package turkey smoked sausage, cut on bias about 1 inch thick
- Red, yellow or orange sweet pepper, cut in strips
- asparagus, cut into 2 inch long pieces
- Onion, halved then sliced
- dried Italian seasoning
- salt and pepper
Instructions:
- Preheat oven to 425 degrees
- Line a baking sheet with heavy duty aluminum foil
- Place vegetables in a bowl, drizzle with olive oil and toss to coat. Spread out on prepared baking sheet. Sprinkle with Italian seasoning, salt and pepper.
- Bake for 15 minutes . Add smoked sausage pieces, and cook for another 5 minutes or until heated through
- Serve immediately.
