Orange Chicken





This simple recipe can be made even easier by cutting your chicken into chunks before you freeze it. Another option is to cut it up the night before. Did you know it easier to cut partially frozen meat?

I use avocado oil for this recipe because it doesn't add any flavor.

Use your favorite barbeque sauce. Fresh squeezed OJ makes this super special.

ORANGE CHICKEN

Ingredients:

  • 1 1/4  pounds boneless chicken breast fillets  - cut into cubes
  • 3⁄4 cup flour
  • 3 tablespoons Avocado Oil
  • 2 navel oranges, zested and juiced
  • 1⁄2 cup barbecue sauce
  • 2 tablespoon lite soy sauce or tamari

Instructions:

  1. In a gallon-sized ziplock bag, add chicken cubes and flour. Shake vigorously until chicken is well-coated. Remove chicken and shake off excess flour.
  2. Add oil to a large skillet or wok, turn to medium heat, add cubed chicken and cook until cooked through.
  3. While chicken is cooking, combine, orange zest, orange juice, barbecue sauce and soy sauce in bowl or measuring cup. Whisk to combine.
  4. Add sauce mixture to skillet and toss to coat chicken. Cook on medium heat until sauce has thickened to desired consistency.
