Turkey Burrito Skillet



Turkey Burrito Skillet is one of my favorite meals.  I could eat it every week.  It is colorful and flavorful! The secret is not to overcook the Zucchini. I use 93% lean ground turkey - I just find the 99% to be too dry. Use packaged taco seasoning and canned enchilada sauce or make your own.  Homemade Taco Seasoning

Turkey Burrito Skillet

Ingredients:

  • 2 Green Onions
  • 1 Red Bell Pepper
  • 1 Zucchini
  • 2 tsp Avocado Oil
  • 1 lb Ground Turkey (93% fat)
  • 2 Tbsp. Taco Seasoning
  • 10 oz can . Red Enchilada Sauce
Toppings
  • Shredded Mexican Cheese Blend
  • Roma Tomato, chopped
  • Tortilla Strips - tri-colored
  • Sour Cream

Instructions:

  1. Trim and thinly slice green onions. Cut red pepper and zucchini into bite sized chunks.
  2. Place a large non-stick pan or cast-iron skillet over medium-high heat and add 2 teaspoons Avocado oil. Add red bell pepper, turkey, and taco seasoning to hot pan. Stir occasionally until turkey is browned, 4-6 minutes.
  3. Add zucchini, half the green onions (reserve remaining for garnish), and a pinch of pepper to pan. Stir occasionally until zucchini is crisp but still tender, 2-4 minutes.
  4. Stir in enchilada sauce until combined and heated through. Remove from burner.
  5. Top with cheese, tortilla strips, tomato, sour cream, and remaining green onions.
