I love Dijon Mustard. Made with both brown and yellow mustard seeds, white wine, and less vinegar than traditional mustard, this mustard is thicker and makes it perfect for adding to sauces. You can omit the broccoli from this recipe and serve with a different vegetable. Or cook frozen broccoli and serve on the side. This is a good meal-prep chicken recipe as well.

Chicken & Broccoli Dijon

Ingredients:
- ½ cup chicken broth – reduced-sodium
- 1 tbsp light soy sauce
- 4 cups broccoli florets
- 1 clove garlic minced
- 1 tbsp olive oil
- 1 lb boneless skinless chicken breast cut into thin strips
- 2 tbsp dijon mustard
Instructions:
- In a mixing bowl, combine soy sauce and chicken broth. Set aside
- In a large skillet, heat oil over medium-high heat. Add garlic and broccoli. Cook until tender, and crisp. Remove from skillet, set aside, and cover with tin foil to keep warm.
- In the skillet, add chicken. While stirring, cook for approx 3 – 4 minutes until chicken is fully cooked.
- Add broth to skillet and mix well. Bring contents to a boil. Reduce the heat to medium/low.
- Add in mustard. Mix well.
- Return the broccoli to the skillet. Stir to mix. Cook mixture while stirring until heated through.
