Greek Turkey Meatballs


Technically these meatballs take more than 20 minutes but they are a great meal prep or make-ahead meal.  My favorite way of serving these meatballs is cut in half in a pita pocket with The Farm at Red Hill Creamy Dill Sauce or Tzatziki Sauce.  I usually pair this with my Easy Greek Salad which adds both color and crunch. They also freeze well.

Greek Turkey Meatballs

Ingredients:

  • 1 - pound ground turkey -93% 
  • 1⁄2 - cup whole wheat Panko Bread Crumbs
  • 1 egg,  lightly beaten
  • 1 teaspoon paprika
  • 1⁄4 teaspoon cayenne pepper  (or to taste)
  • 1⁄4 teaspoon salt
  • 1⁄8 teaspoon fresh ground pepper (or to taste)
  • 2 garlic cloves,  minced
  • 1 teaspoon dried oregano

Instructions:

  1. Preheat oven to 350.
  2. Place a wire rack over a baking sheet; grease with cooking spray and set aside.
  3. In a large bowl, combine all ingredients.  Using a wooden spoon, mix until well combined and thoroughly incorporated.
  4. Shape mixture into 12 meatballs (about 1 1/2 inch balls)  and place on previously prepared wire rack.  
  5. Bake for 16 to 18 minutes, or until cooked through.
