The "man of the house" grew up in Vermont and introduced me to REAL maple syrup. If your idea of maple syrup is Log Cabin, you don't know what you are missing! This recipe requires the real thing - from Vermont -of course! I use whole Sweet Potatoes wrapped in plastic designed to be microwaved for this recipe. Once they are cooked, I just scoop out the potato and mash with a bit of butter. You can use premade frozen or refrigerated mashed sweet potatoes as well. I say two servings here but we usually have a few tenderloins left which become lunch the next day.

Maple-Glazed Chicken with Sweet Potatoes
Ingredients:
- 1 pound chicken tenderloins
- 2 teaspoons Mrs Dash Chicken Grilling Blend
- 3 T butter
- 1⁄4 cup maple syrup
- 2 sweet potatoes - microwavable or prepared mashed
Instructions:
- Prepare sweet potatoes according to package directions.
- Meanwhile, lightly coat chicken with steak seasoning. Heat 2 T butter in a large skillet over medium-high heat; add chicken. Cook 5 to 6 minutes until cooked through, turning once halfway through cooking. Remove from skillet; cover and keep warm.
- Lower heat to med-low. Add remaining 1 T of butter to the skillet and scrape up browned bits. Stir maple syrup into hot skillet; cook 1-2 minutes.
- Divide chicken and potatoes among 2 plates. Drizzle with maple syrup mixture.
