As the weather gets colder, comfort foods start appearing on my menu. Meatloaf certainly is on the comfort-food list. I make mini-loaves because it cuts the cooking time considerably. My secret ingredient is bbq sauce which I mix into the meatloaf mixture.
I like to use a "meatloaf mix" of pork, beef and veal but I have made this with just ground beef or ground bison.
My side dishes are usually green peas and some type of potato - smashed red potatoes in this case - just boil some red potatoes and smash with a potato masher or fork. Add a little butter if you like.

Mini Meat Loaves
Ingredients
- 1 pound ground beef
- 1 egg
- 1/4 cup bread crumbs (seasoned or plain)
- 1/2 cup 2% milk
- 1 T dehydrated minced or chopped onion
- 2 t parsley
- 1 t basil
- 1/2 t oregano
- 1/4 cup barbecue sauce
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients except barbecue sauce in a large bowl. Mix until just combined - using your hands is best. Add barbecue sauce and mix it in.
- Divide meat mixture into 4 equal parts. Shape into a ball and then flatten sides to make a mini-loaf.
- Place on a baking sheet and bake in a 350-degree oven for 35-40 minutes.
