Mini Meat Loaves

 

As the weather gets colder, comfort foods start appearing on my menu.  Meatloaf certainly is on the comfort-food list.  I make mini-loaves because it cuts the cooking time considerably.  My secret ingredient is bbq sauce which I mix into the meatloaf mixture.

I like to use a "meatloaf mix" of pork, beef and veal but I have made this with just ground beef or ground bison.  

My side dishes are usually green peas and some type of potato - smashed red potatoes in this case - just boil some red potatoes and smash with a potato masher or fork. Add a little butter if you like.

Mini Meat Loaves

Ingredients

  • 1 pound ground beef
  • 1 egg
  • 1/4 cup bread crumbs (seasoned or plain)
  • 1/2 cup 2% milk
  • 1 T dehydrated minced or chopped onion
  • 2 t parsley
  • 1 t basil
  • 1/2 t oregano
  • 1/4 cup barbecue sauce

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients except barbecue sauce in a large bowl.  Mix until just combined - using your hands is best.  Add barbecue sauce and mix it in.
  3. Divide meat mixture into 4 equal parts.  Shape into a ball and then flatten sides to make a mini-loaf.
  4. Place on a baking sheet and bake in a 350-degree oven for 35-40 minutes.
