It's fall and that means chilly days and chili dinners! This dish is a non-traditional chili with all the chili flavors but no beans. Instead of beans, it is loaded with sweet potatoes. A nice change of pace with all the flavors of fall. Oh, and did I mention how easy it is and ready in 30 minutes?
You can use whatever level of Rotel tomatoes you like - amp it up or tone it down. Add a bit more chili powder or use a bit less. And if you get the bay leaf, don't forget to make a wish!

No Bean Turkey and Sweet Potato Chili
Ingredients
- 16 oz 93% lean ground turkey
- kosher salt to taste
- 1⁄2 cup onion chopped
- 3 cloves garlic, crushed
- 10 oz can Rotel tomatoes with green chilies
- 8 oz can low sodium tomato sauce
- 1 cup water
- 1⁄2 tsp cumin or to taste
- 1⁄4 tsp chili powder
- 1⁄4 tsp paprika
- 1 bay leaf
- 2 medium sweet potato, peeled and diced into 1-inch cubes
- Sour cream, for garnish
Instructions
- In a large pot, heat 2 t Olive or avocado oil over med-high heat. Add ground turkey breaking it up as it cooks into smaller pieces until no longer pink. Season with salt.
- Add onion and garlic; cook 3 minutes over medium heat.
- Add the can of Rotel tomatoes (with liquid), sweet potato, tomato sauce, water, cumin, chili powder, paprika, salt and bay leaf. Bring to a boil.
- Lower heat to med-low, cover and simmer until potatoes are soft and cooked through, about 20-25 minutes.
- Remove bay leaf and serve.
