Not your ordinary Spaghetti with Meat Sauce. This simple meaty sauce is best served with a thicker pasta such as spaghetti, linguini or fettuccini. The use of chicken or vegetable broth makes it a bit lighter than your traditional meat sauce. Use grass-fed beef for the best taste or even ground bison.

Rustic Beef Meat Sauce
Ingredients
- 1 cup unsalted chicken or vegetable stock divided
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- 1 pound ground beef (grass-fed) or bison
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper divided
- 3⁄4 teaspoon kosher salt divided
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon onion powder
- 1⁄2 cup frozen pearl onions thawed
- 2 fresh tomatoes, chopped (about 2 cups)
- 1 tablespoon unsalted ketchup
- 1 tablespoon chopped fresh chives
Instructions
- Combine 1/4 cup stock and cornstarch in a small bowl, stirring with a whisk.
- Heat oil in a large skillet over medium-high. Add beef, stirring to crumble, until cooked through. Drain off fat, if needed.
- Stir in Worcestershire sauce, 1/2 t pepper, 1/2 t salt, garlic powder, onion powder, cook 2 minutes. Remove mixture from pan.
- Add pearl onions to skillet; cook 2 minutes. Add 2 cups tomato and ketchup; cook 3 minutes.
- Stir in cornstarch mixture, remaining 3/4 cup stock, remaining 1/2 teaspoon pepper, and remaining 1/4 teaspoon salt. Cook 3-5 minutes or until thickened.
- Return beef mixture to skillet and cook an additional minute or two.
