Skillet Chicken with Tomatoes and Spinach


Light and fresh yet rustic and filling, this dish comes together in less than 20 minutes.  I like to serve this with Barilla Protein Plus or Ronzoni Smart Taste.  The man of the house is not real fond of the taste of whole wheat pasta but those pass muster.

Skillet Chicken with Tomatoes and Spinach

Ingredients

  • 2 Tablespoons olive oil
  • 2  boneless chicken breasts cut into strips
  • 1 medium onion diced
  • 1⁄2 teaspoon minced garlic
  • 14 1⁄2 oz can diced tomatoes undrained
  • 1⁄4 cup water
  • 1 1⁄2 teaspoon dried Italian Seasoning
  • 1⁄2 teaspoon pepper
  • 1⁄2 teaspoon salt
  • 1 cup baby spinach packed tight strim stems as needed

Instructions

  1. Heat oil in a 10-inch non-stick fry pan on medium-high heat. Add the chicken strips, cook until  browned, about 10 minutes. Add the diced onion and minced garlic to the pan, cook until onion is soft.
  2. Add undrained tomatoes, water,  Italian seasoning, salt and pepper to the pan, stir to combine.  Bring to a boil .   Reduce heat to low, cover and simmer about 5 minutes. Add the spinach, cook and stir until the spinach begins to wilt.  Serve over spaghetti,
