Very Veggie Beef Teriyaki Stir Fry


Isn't this dish pretty?  And it tastes even better!  Thin strips of beef with asparagus, snap peas, peppers and carrots in a delicious sauce served over basmati rice - better than takeout!

I use Wegman's Organic Teriyaki sauce in this dish.  You can get it from Amazon if you don't have a Wegmans near you.  Primal Kitchen and Ocean Halo make a soy-free teriyaki sauce that would work as well.  What you want is a teriyaki sauce that is thicker than soy sauce - more like the consistency of a bbq sauce.  Of course, you can make your own but when I find a good product that makes my life easier, I'll take advantage of it.

This dish is great for meal-prep as well. Luckily we had leftovers so I can eat this again for lunch twice this week!

Very Veggie Beef Teriyaki Stir Fry

Ingredients

  • 1 lb flat iron steak (see  instructions for prep notes)
  • 2 tbsp avocado oil, divided
  • 1 tsp minced garlic
  • 2 medium carrots, peeled and thinly sliced
  • 1⁄2 lb skinny asparagus, ends trimmed, sliced into 1" pieces
  • 1 red bell pepper,cut into thin strips
  • 1 yellow bell pepper, cut into thin strips
  • 6 oz snap peas, trimmed and strings removed
  • 1/2 cup Wegmans Organic Teriyaki Sauce
  • 1 tsp kosher salt or sea
  • 1 tsp cracked black pepper

Instructions

  1. Prep for steak:  Place the steak in the freezer for 20 minutes. Remove from the freezer and slice thinly against the grain, 1/8" - 1/4" thick. While the steak is freezing, prepare the vegetables.
  2. Heat a wok over medium-high heat. Add 1T oil. Add the steak to the wok, season with salt and pepper, and stir fry until charred and medium-rare, 3-4 minutes. Remove the steak with tongs and set aside.
  3. Add the second tablespoon oil to the wok and allow to heat until shimmering. Add garlic and saute for 1 minute. Add the carrots and asparagus and stir-fry for 3 minutes. Add the bell pepper and snap peas to the wok and toss to combine all the vegetables. Stir fry all vegetables for an additional 3 minutes.
  4. Add the steak back to the skillet along with the teriyaki sauce.  Stir to coat all the meat and vegetables and sauce is heated through.
