I would only order Chicken Marsala when I went out to eat until I found out how easy it is to make at home. The only "strange" ingredient is Marsala wine but where I live, you can buy wine in the grocery store so it is readily available and doesn't take an extra trip. I prefer baby bella mushrooms in this dish but you can use white mushrooms as well. Yes, beef broth with chicken. That is what makes the gravy so rich.
Chicken Marsala
Ingredients
- 2 tsp olive oil
- 1 cup baby bella mushrooms sliced
- 1 lb chicken breast cutlets
- 1 tsp dried thyme
- 1⁄2 tsp table salt (more or less to taste)
- 1⁄4 tsp black pepper
- 1⁄2 cup marsala wine
- 1 1⁄4 cup beef broth (bone broth or stock). divided
- 1 tbsp corn starch
Instructions
- Heat oil in a large skillet over medium-high heat. Add mushrooms and sauté until tender and releasing liquid, about 5 minutes. Remove from pan to bowl once cooked.
- Season both sides of chicken cutlets with thyme, salt and pepper. Sauté cutlets 3-4 minutes per side or until cooked through. Return mushrooms to skillet.
- Add wine to skillet; simmer 1 minute. Add 3/4 cup of broth and simmer, uncovered 3 minutes.
- Dissolve cornstarch in remaining 1/2 cup of broth in a small bowl; add to skillet. Simmer until sauce thickens, stirring constantly and incorporating mushrooms into the liquid, about 1 minute.
