Turkey Sausage & Peppers Pasta Toss


Quick, filling and perfect for a busy evening or weekend.  You can use whatever color peppers you have on hand. Substitute your favorite macaroni pasta for penne.  Using smoked sausage that is already pre-cooked means all you have to do is heat it through.

Turkey Sausage & Pepper Pasta Toss

Ingredients

  • 1 pkg  turkey smoked sausage
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 3 tsp garlic
  • 1 med onion
  • 1  red bell peppers
  • 1 orange bell pepper
  • 2 cups penne pasta - uncooked

Instructions

  1. Start water for pasta.
  2. Prepare vegetables - Core and seed peppers and cut into thin slices.  Cut onion into thin slices. 
  3. Cut sausage on a diagonal - about 1/2 thick "rounds".
  4. Cook pasta according to package directions.
  5. Spray large skillet with cooking spray. Add sausage and stir frequently, until heated through and slightly browned.
  6. Add bell peppers, onion, broth, garlic, pepper flakes, and oregano. Sauté until liquid is gone and vegetables soften about 5 minutes stirring frequently.  Add more liquid if needed.  
  7. Drain pasta.  
  8. Serve sausage and vegetables over pasta.  Add a side salad for a complete meal.
