Quick, filling and perfect for a busy evening or weekend. You can use whatever color peppers you have on hand. Substitute your favorite macaroni pasta for penne. Using smoked sausage that is already pre-cooked means all you have to do is heat it through.

Turkey Sausage & Pepper Pasta Toss
Ingredients
- 1 pkg turkey smoked sausage
- 1/2 cup chicken broth
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes
- 3 tsp garlic
- 1 med onion
- 1 red bell peppers
- 1 orange bell pepper
- 2 cups penne pasta - uncooked
Instructions
- Start water for pasta.
- Prepare vegetables - Core and seed peppers and cut into thin slices. Cut onion into thin slices.
- Cut sausage on a diagonal - about 1/2 thick "rounds".
- Cook pasta according to package directions.
- Spray large skillet with cooking spray. Add sausage and stir frequently, until heated through and slightly browned.
- Add bell peppers, onion, broth, garlic, pepper flakes, and oregano. Sauté until liquid is gone and vegetables soften about 5 minutes stirring frequently. Add more liquid if needed.
- Drain pasta.
- Serve sausage and vegetables over pasta. Add a side salad for a complete meal.
