Turkey Schnitzel


I really like turkey.  As a kid, we only had it on Thanksgiving and Christmas. Now I eat it fairly regularly but usually as ground turkey.  I'll make this when I'm craving fried chicken. 

Shady Brook Farms sells turkey breast cutlets.  They are perfect for this dish.  And they cook up quick!

I skip the flour step of the traditional breading process.  The crust is still crunchy but a bit lighter.  I usually add more Italian seasoning to my "seasoned bread crumbs".  I like to serve this with slaw or a chopped salad.

Turkey Schnitzel

Ingredients

  • 4 Turkey breast cutlets
  • 1 egg
  • 1 T water
  • 1 cup seasoned bread crumbs
  • 1 T olive oil

Instructions

  1. Beat together egg and water.  Dip cutlets in egg wash and then coat with bread crumbs.  
  2. Heat oil in a large skillet over medium-high heat.  Cook cutlets 2-3 minutes a side.
