Boneless chicken thighs cooking in herb-infused butter. What can I say but Yum! This one is truly dinner in less than 20 minutes.

Herbed Chicken Thighs with Zucchini
Ingredients
- 3 tablespoons butter
- 2 tsp minced garlic
- 1 tsp dried oregano
- 1 teaspoon fresh rosemary chopped
- 1 teaspoon dried thyme chopped
- 1 pound boneless skinless chicken thighs
- salt and pepper
- 2 medium sized zucchini sliced
Instructions
- Melt butter over medium high heat in 10 inch skillet. Add the garlic, and herbs and stir to distribute throughout the butter. Add the chicken and cook for 3-4 minutes on each side or until chicken is no longer pink. Remove chicken and set aside on plate.
- Add the zucchini to the pan. Sprinkle with salt and pepper. Saute for 2-3 minutes or until tender. Add chicken back to the pan for a minute or so and serve.
