Herbed Chicken Thighs With Zucchini


Boneless chicken thighs cooking in herb-infused butter.  What can I say but Yum!  This one is truly dinner in less than 20 minutes.

Herbed Chicken Thighs with Zucchini

Ingredients

  • 3 tablespoons butter
  • 2 tsp minced garlic
  • 1 tsp  dried oregano
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon dried thyme chopped
  • 1 pound boneless skinless chicken thighs 
  • salt and pepper
  • 2 medium sized zucchini sliced

Instructions

  1. Melt butter over medium high heat  in 10 inch skillet. Add the garlic, and herbs and stir to distribute throughout the butter.  Add the chicken and cook for 3-4 minutes on each side or until chicken is no longer pink. Remove chicken and set aside on plate.
  2. Add the zucchini to the pan.  Sprinkle with salt and pepper. Saute for 2-3 minutes or until tender. Add chicken back to the pan for a minute or so and serve.
