Citrus Herbed Chicken


A lemony sauce brightens lightly breaded boneless breasts in this easy weeknight dinner.  After eating this dish, you won't miss fried chicken and gravy one bit!

Citrus Herbed Chicken

Ingredients

  • 1⁄4 cup flour
  • 2 tbsp grated Parmesan cheese
  • 1⁄2 tsp Garlic Powder
  • 1⁄4 tsp Black Pepper 
  • 1 pound boneless skinless chicken breasts
  • 1 tbsp oil
  • 1 1⁄2 cups Chicken Stock
  • 1 tsp freeze dried basil
  • 1 tsp  Oregano 
  • 2 tbsp lemon juice

Instructions

  1. Mix flour, Parmesan cheese, garlic powder and pepper in shallow dish. Reserve 2 tablespoons. 
  2. Using a meat mallet, pound breasts to even thickness. Moisten chicken lightly with water. Dredge in flour mixture. 
  3. Heat oil in large nonstick skillet on medium heat. Cook chicken breasts 3-4 minutes per side or until golden brown. Cook in two batches if needed. Remove chicken from skillet; keep warm. 
  4. Mix stock, basil, oregano and reserved flour mixture in medium bowl until well blended. Add to skillet, scaping up browned bits.  
  5. Bring to boil. Reduce heat to low; simmer 2 minutes or until sauce is slightly thickened, stirring frequently. Stir in lemon juice. 
  6. Serve sauce over breasts
