Crock Pot Garlic Balsamic Pork Loin


While grocery shopping one week, I found a nice small pork loin. This is the same cut of meat that they make center cut porkchops from.  

I found an interesting recipe that had you make an emulsion of balsamic vinegar, oil and herbs. I decided to use a premade emulsion - creamy balsamic salad dressing.  Always looking for the easy way!  My favorite is Brianna Home Style New American Creamy Balsamic Dressing.  Marzetti Simply Dressed Balsamic is a good option too. 

You can use a pork tenderloin in this recipe as well.  Cooking time will be reduced.  Tenderloin cooking time is about 2 hours per pound on low.  

I like using my crockpot on weekends.  I don't have to do much cooking after a day full of projects or errands.  And there are usually leftovers for lunches or dinner later in the week.

Crock Pot Garlic Balsamic Pork Loin

Ingredients

  • 2 pound pork loin  
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1⁄2 teaspoon onion powder
  • 1⁄4 teaspoon fresh ground pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup creamy balsamic salad dressing
  • 2 tsp minced garlic

Instructions

  1. Pat pork loin with paper towels.
  2. Combine salt, paprika, onion powder, and black pepper in a small bowl; whisk to combine. Sprinkle rub all over the pork.
  3. Add 1 tablespoon olive oil in a large skillet and set over medium heat; add pork and sear for a couple minutes on each side, or until golden brown.
  4. Place pork roast in slow cooker.  Combine salad dressing, Italian seasoning and garlic in a measuring cup.  Pour over pork roast.  
  5. Cover slow cooker with a lid and cook on LOW for 4-5 hours, or on HIGH for 21/2 -3 hours.  Note: pork is done when internal temperature reaches 145˚F. 
  6. Remove pork from slow cooker and let rest for 15 minutes before slicing. Slice and serve.
