You know me. I love easy meals. This one can be made even easier by cutting the chicken breast ahead of time. I do it when I get home from the grocery store and freeze bags of strips for stir-fry dishes. Using precut broccoli florets saves even more time. Don't overcook the broccoli. It will continue to soften a bit as you cook the chicken.

Simple Chicken Dijon
Ingredients
- 1⁄2 cup chicken broth – reduced-sodium
- 1 tbsp light soy sauce
- 4 cups broccoli florets
- 1 tsp minced garlic
- 1 tbsp olive or avocado oil
- 1 lb boneless skinless chicken breast - cut into thin strips
- 2 tbsp dijon mustard
Instructions
- Combine soy sauce and chicken broth in a small bowl or measuring cup. Set aside
- In a large skillet, heat oil over medium-high heat. Add garlic and broccoli. Cook until broccoli is crisp tender. Remove from skillet, place in a bowl and cover to keep warm.
- Lower heat to medium. Add chicken to skillet. Stir fry for about 3 – 4 minutes until chicken is fully cooked.
- Add broth mixture to skillet and mix well. Bring contents to a boil. Reduce the heat to medium/low. Add in mustard. Mix well.
- Return broccoli to the skillet. Stir to coat broccoli and warm through.
- Serve over rice if desired.
